Before lunch, Seth and I headed out to the store, probably less than a mile down the street. I had completed my grocery shopping yesterday, or so I thought, until I impulsively decided after putting up two loaves of bread up to rise, to make “Scottish Sponge Bread” and then realized I didn’t have all the ingredients to complete it without making a trip to the store. And, I had already made the sponge.
I am finding that I am notoriously impulsive when it comes to baking, which means that I often don’t even bother to read the recipe first before I start making something. The irony is in the fact that I am constantly reminding Nate that he should read the recipe through first, before attempting something. Of course, of the two, I’m the most experienced, which most of the time means that I know what I can replace another missing ingredient with (except in this case, since this resourcefulness has it’s limitations).
The upside is that not only do we have the two loaves (one regular, one cinnamon raisin), but we will have four or five extra loaves (it was huge recipe that called for 9 cups of flour, after the 6 cups that went into the sponge!), and depending on how it turns out, I may have next two weekends off. I also decided I wanted to make blueberry muffins (fie on me, they’re not in season!), so I bought some frozen blueberries. So we have lots of yummy carbs around.
Nate and I have been arguing about car usage, usually me telling him to think of other things that need to get done at the same time to reduce trips. Still need to work on this myself, apparently. It took $46 to fill our gas tank, and I want to see if I can make this last for 4 weeks. Sigh. Still need to get a bike helmet for Seth; if we had taken the bike, at least I could have prided myself in not using gas and getting exercise all in one.
